Nanny’s Cabbage, Potatoes, and Pepperoni

Cabbage, Pepperoni & Potatoes

When we were younger Mom (Nanny to the grandkids!) did most of the cooking. Cabbage, Potatoes, and Pepperoni is a classic depression era dish that she often made. We would always know what was for dinner as soon as we opened the front door, as the aroma of cabbage is distinct (and not in a good way!). It’s a good thing that its flavor more than makes up for the aroma! As a kid I was a picky eater. It seemed in most meals I was always picking out something I didn’t like and this dish was no exception. I was not a fan of cabbage and would only eat the pepperoni and potatoes! But the pepperoni and potatoes were oh so delicious!

This dish is full of flavor. The cabbage will still have body and a slight crunch to it. The sauteed pepperoni gives it a kick. The potatoes soak up the flavor of the sauce. The longer this dish sits the more the flavors come together. If you like cabbage this dish is a keeper!

You will need:

2 heads of cabbage
1 stick pepperoni
4 garlic cloves
29 oz. can Hunt’s tomato sauce
4 medium potatoes
red pepper flakes (to taste)
Olive oil
 
Step by Step:
 
Peel potatoes and boil until almost fork tender.
Cut into large chunks and set aside.
 
Mince garlic, cut pepperoni into ¼ inch slices.
 
Core and cut cabbage into large chunks.
 
Saute pepperoni until lightly browned, add garlic
and saute 2 minutes longer.
 
Add tomato sauce and red pepper flakes. Drizzle
with olive oil.
 
Add cabbage and potatoes to the pot.
 
Cover and simmer for 45 minutes to 1 hour, stirring 
every 15 minutes.

Nanny’s Cabbage, Pepperoni, and Potatoes
 
Ingredients:
 
2 heads of cabbage*

Instructions:

  1. Peel potatoes and boil until almost fork tender.Cut into large chunks and set aside.
  2. Mince garlic, cut pepperoni into ¼ inch slices.
  3. Core and cut cabbage into large chunks.
  4. Saute pepperoni until lightly browned, add garlic and saute 2 minutes longer.
  5. Add tomato sauce and red pepper flakes.** Drizzle with olive oil.
  6. Add cabbage and potatoes to pot.
  7. Cover and simmer for 45 minutes to 1 hour, stirring every 15 minutes.
Notes:
* This will look like alot of cabbage but it will cook down quite a bit.
**Use red pepper flakes sparingly as the pepperoni makes this dish  somewhat spicy.
